Herb Oil

Blanch any soft green herb in boiling water for 60 secs, stop the cooking and keep the green, put into ice cold water for a minute or 2, drain well, squash out as much water as possible. Put into a blender with a good quantity of extra virgin olive oil and blend for 5 minutes, put a colander over a bowl with muslin or clean tea towel, pour the mix into it and drain for a good 24 hours. Decant into bottles or tubs.
